Summer Grain Bowl with Boursin Cheese
This tuna and avocado recipe combines the grain of your choice with veggies and Boursin® Garlic & Herbs cheese for an invigorating grain bowl perfect for seasonal summer menus.

For Summer Grain Bowl:

Start by preparing your chosen grain, cook following package directions. When cooked, rinse under cold water & spread on rimed baking sheet to cool.

While grains are cooking, prepare bowl toppings. Wash & trim both sides of green beans, then steam until crisp tender, about 5 minutes. Prepare bowl with ice & cold water, place beans in bowl when done to stop cooking and maintain crunch and color.

Thinly slice avocado, radishes and cabbage. Set aside.

Zest & Juice lemon and chop mint & cilantro.

When grains are cool, toss with herbs and 1/2 of lemon zest & juice in a large bowl.

For the dressing, combine olive oil, salt, pepper, and remaining lemon juice and zest in a small bowl. Whisk to combine.

In serving bowls, layer in grains, top with cabbage, radish, tuna, avocado and crumbled Boursin® cheese.

Drizzle dressing over each bowl & enjoy! Can be stored in the refrigerator until ready to serve, but plan to garnish as the last moment.
